Add some Barovian Witches minions that are doing some crazy witch ritual in homage to Baba Lysaga to add some spice to the fight, the Barovian Witches make way more sense in Berez than in Castle Raveloft IMO.
How about giving the Tome some magic effects to dissuade them from selling it and keeping it for themselves? I made that the Tome gave them an aura of their hit point maximum can't be reduced to whoever stayed 30 feet close of the one attuned to the Tome of Strahd. I also let them cast Speak with Dead freely as ritual while attuned to the Tome, it gave them enough reasons to want it and risk Strahd's wrath.
Okay, use this opportunity to say someone whisked away the Tome of Strahd from the burning mansion to give them a reason for them to go to some place in Barovia you want them to go but they don't have any reason to go like Berez or Argynvostholt for example if none of the readings lead them there.
I'm so proud of you, Strahd is really supposed to really be disgusting to fight with in Castle Ravenloft and you're doing great, hoping your player manage to survive the ordeal though lol.

Your party is quite big, I would recommend you readjust some combat encounters accordingly, adding a bit more enemies or more HP for it to be a proper challenge. The guides on this sub are really useful, I recommend you reading it. Also maybe try to convince the bloodhunter to play something else or buff the bloodhunter a bit because it sucks lmao.
There are dangerous places in the campaign that the players will have little to no reason to risk their lives to visit if one of the fortunes from the card reading aren't there. So I say you should rig or at the very least remove the boring options like inside Madam Eva tent.

Only 2 players? Damn, I can't believe I'm saying this but maybe consider a DMPC, maybe even Ireena Kolyana, giving her some Bard levels maybe. Or Cleric, Fighter or even Paladin, but I think maybe a Valor Bard would make more sense.
